Instructions
Preheat your oven to 350°F (175°C) and grease an 8x8-inch baking dish with butter or cooking spray.
In a large mixing bowl, combine the almond butter, honey or maple syrup, egg, and vanilla extract. Stir until smooth and well combined.
Add the shredded zucchini to the bowl and stir until evenly distributed throughout the batter.
In a separate bowl, whisk together the almond flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until fully incorporated.
Fold in the chocolate chips until evenly distributed throughout the batter.
Pour the batter into the prepared baking dish and spread it into an even layer.
Bake the bars in the preheated oven for 25-30 minutes, or until golden brown and set in the center.
Allow the bars to cool completely in the pan before slicing into squares and serving.
Notes
Be sure to squeeze the excess moisture out of the shredded zucchini before adding it to the batter.
Customize the recipe by adding chopped nuts, dried fruit, or your favorite spices to the batter for extra flavor and texture.
