4slicesof breadsourdough, whole wheat, or your favorite type
½cupsliced tomatoes
¼cupsliced red onion
¼cupsliced cucumbers
A handful of fresh spinach leaves
¼cupshredded mozzarella cheeseoptional
Instructions
In a mixing bowl, mash the avocado with a fork until smooth.
Add lemon juice, salt, and pepper to the mashed avocado and mix well.
Spread the avocado mixture evenly on two slices of bread.
Layer the tomatoes, red onion, cucumbers, spinach, and cheese (if using) on top of the avocado spread.
Top with the remaining slices of bread.
Preheat a panini press or skillet over medium heat.
Grill the paninis for 2-3 minutes per side, or until golden brown and the cheese is melted.
Remove from heat, cut in half, and serve warm.
Notes
For extra flavor, you can add a drizzle of olive oil or balsamic glaze to your panini.
If you don't have a panini press, you can use a skillet and press down on the sandwich with a spatula while it cooks.
