For the French toast:

For the topping:

all-purpose flour

brown sugar

Instructions
Grease the baking dish with butter.
Spread the croissant cubes evenly in the dish.
In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon.
Pour the egg mixture over the croissants.
Press the croissants down gently to make sure they are all soaked in the egg mixture.
Cover and refrigerate for at least 30 minutes, or up to overnight.
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a small bowl, combine the flour, brown sugar, and cinnamon.
Cut in the butter with your fingers or a pastry cutter until the mixture resembles coarse crumbs.
Sprinkle the topping evenly over the croissants.
Bake for 30-35 minutes, or until golden brown and puffed up.
Let cool slightly before serving.
Notes
You can use any type of croissant you like, but day-old croissants work best.
Feel free to add other spices to the custard mixture, such as nutmeg or cardamom.
You can also add a handful of chopped nuts, such as pecans or almonds, to the topping for extra crunch.
