Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, toss the fries with olive oil, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper.
Spread the fries in a single layer on a baking sheet.
Bake for 20-25 minutes, or until golden brown and crispy.
While the fries are baking, make the garlic cheese sauce. In a small saucepan, melt the butter over medium heat.
Whisk in the flour and cook for 1 minute.
Gradually whisk in the milk until smooth.
Bring to a simmer and cook for 2-3 minutes, or until thickened.
Remove from heat and stir in the cheese and garlic powder until melted and smooth.
Serve the fries hot with the garlic cheese sauce.
Notes
You can adjust the amount of cayenne pepper to your liking.
If you don't have russet potatoes, you can use any other type of potato.
Feel free to add other spices to the fries, such as chili powder or cumin.
For a richer cheese sauce, use heavy cream instead of milk.
