Black Pepper Stir Fried Udon

package dried udon noodles

vegetable oil

onion,
thinly sliced

garlic, minced

red
bell pepper, thinly sliced

sliced mushrooms

broccoli florets

soy sauce

oyster sauce (or vegetarian stir-fry sauce)

tablespoon
rice vinegar

tablespoon
honey
1
teaspoon
cornstarch

teaspoons
freshly ground black pepper

cup
chopped green onions, for garnish

egg,
beaten (optional)
Instructions
Cook the udon noodles according to the package directions. Drain and set aside.
Heat 1 tablespoon of oil in a wok or large skillet over high heat. If using, scramble the egg and remove it from the pan.
Add the remaining oil to the pan, and then add the onion and cook until softened, about 3 minutes.
Add the garlic, red bell peppers, mushrooms, and broccoli florets. Cook, stirring constantly, until tender-crisp, about 5 minutes.
Add the cooked noodles and scrambled egg (if using) to the pan.
In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, honey, cornstarch, and black pepper.
Pour the sauce over the noodles and vegetables. Toss everything together until well combined and heated through.
Garnish with green onions, and serve hot.
Notes
If you like your stir-fry spicy, you can add a pinch of red pepper flakes or chili oil to the sauce.
Feel free to add other vegetables to the stir-fry, such as carrots, snow peas, or baby corn.
If you’re making a vegan version, omit the egg and use a vegetarian stir-fry sauce instead of oyster sauce.
