Instructions
Heat the oil in a large skillet over medium heat. Add the chopped onion and bell pepper and cook until softened, about 5 minutes.
In a medium bowl, whisk together the eggs, milk, salt, and pepper.
Pour the egg mixture into the skillet with the vegetables. Scramble the eggs until they are cooked through, about 3-5 minutes.
Warm the tortillas in the microwave for 10-15 seconds each to make them soft and pliable.
To assemble the burritos: place a tortilla on a flat surface. Spoon a generous amount of the scrambled egg mixture into the center of the tortilla. Top with cheese and your favorite toppings.
Fold in the sides of the tortilla, then fold the bottom up and roll to form a burrito. Repeat with the remaining tortillas.
For a crispy exterior, you can grill the burritos in a skillet over medium heat for 1-2 minutes per side.
Serve immediately.
