brussels sprouts, trimmed and halved

olive oil

corn or flour tortillas

ripe
avocado

cup
lime juice

chopped cilantro

cup
sour cream or plain yogurt (optional)

toppings: shredded cheese (optional), pico de gallo, hot sauce, etc.
Instructions
Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
Toss Brussels sprouts with olive oil, salt, and pepper in a bowl.
Spread Brussels sprouts on a baking sheet and roast for 20-25 minutes, or until tender and lightly browned, flipping halfway through.
While the sprouts are roasting, prepare the avocado-lime sauce.
Mash the avocado in a bowl.
Stir in lime juice, cilantro, sour cream or yogurt (if using), salt, and pepper.
Warm the tortillas in a dry skillet or microwave.
To assemble the tacos, place a few roasted Brussels sprouts in each tortilla.
Top with avocado-lime sauce and your favorite toppings.
Notes
If you don't have avocado, you can substitute with hummus or a black bean spread.
Feel free to use any type of cheese you prefer.
For a spicier kick, add a pinch of chili powder or cayenne pepper to the avocado sauce.
