Ingredients
For the cauliflower:

cauliflower, cut into florets

For the avocado crema:

Instructions
Here's what you should do.
Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper.
In a bowl, toss cauliflower florets with olive oil, salt, and pepper.
Spread cauliflower on the prepared baking sheet in a single layer.
Bake for 15 minutes, then remove from the oven and toss with buffalo sauce.
Bake for an additional 10-15 minutes, or until tender and slightly crispy.
While the cauliflower is baking, prepare the avocado crema.
In a food processor or blender, combine avocado, sour cream or yogurt, lime juice, cilantro, salt, and pepper.
Blend until smooth and creamy.
Warm the tortillas in a dry skillet or microwave.
To assemble tacos, place a few cauliflower florets on each tortilla.
Top with avocado crema and your favorite toppings.
Notes
For extra crispy cauliflower, you can toss it with cornstarch before baking.
If you don't have a food processor or blender, you can mash the avocado with a fork and then whisk in the other ingredients.
Feel free to use your favorite brand of buffalo sauce or make your own.
