Buffalo Chicken Bowls with Cauliflower Garlic Rice

Ingredients
For the buffalo chicken:

boneless, skinless chicken breasts, cut into bite-sized pieces

For the cauliflower rice:

For the cilantro lime ranch:

ranch dressing

Instructions
In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, then cook until browned and cooked through.
Add buffalo sauce to the skillet and stir to coat the chicken. Cook for an additional 2-3 minutes until heated through.
While the chicken is cooking, heat olive oil in a medium saucepan over medium heat. Add minced garlic and cook for 30 seconds, until fragrant.
Add the riced cauliflower and cook, stirring occasionally, until tender, about 5-7 minutes. Season with salt and pepper to taste.
To assemble the bowls, divide the cauliflower rice evenly among four bowls. Top with buffalo chicken and drizzle with cilantro lime ranch dressing.
Notes
You can adjust the amount of buffalo sauce to your preferred spice level.
For a vegan version, use a plant-based chicken substitute and a vegan ranch dressing.
If you don't have cilantro, you can use parsley or green onions for the ranch dressing.
