Instructions
To Make the Cake:
Preheat oven to 350°F (175°C). Grease three 4-ounce ramekins.
In a small bowl, whisk together egg yolk, oil, sour cream, and sugar.
In a separate bowl, whisk together flour, cocoa powder, salt, and baking soda.
Add the wet ingredients to the dry ingredients and mix until just combined.
Stir in the hot coffee, a little at a time, until the batter is smooth.
Divide batter evenly among the prepared ramekins.
Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the ramekins for 10 minutes, then invert onto a wire rack to cool completely.
To make the frosting:
In a small saucepan, combine milk, sugar, and butter. Bring to a boil over medium heat, stirring constantly.
Remove from heat and stir in the chocolate chips until melted and smooth. Set aside to cool slightly.
To assemble the cake:
Place one cake layer on a plate.
Spread a layer of frosting over the cake, then sprinkle with pecans and drizzle with caramel sauce.
Repeat with the second cake layer.
Top with the third cake layer and frost the entire cake.
Decorate with additional pecans and caramel sauce, if desired.
Notes
Make sure to use strong hot coffee, as it will help to create a moist and flavorful cake.
You can adjust the amount of caramel and pecans to your liking.
To make this recipe for one, simply halve the ingredients and bake in one ramekin.
