This gourmet grilled cheese sandwich features fresh mozzarella, tomato slices, basil leaves, and balsamic glaze on crusty bread.

Ingredients

slices
of crusty bread (sourdough or ciabatta are great choices)
4
slices
fresh mozzarella cheese
1
large
tomato, sliced
Fresh
basil
leaves
Butter,
for
spreading
Instructions
Spread butter on one side of each slice of bread.
Place two slices of bread, butter-side down, in a skillet over medium heat.
Top with two slices of mozzarella cheese.
Layer tomato slices and basil leaves on top of the cheese.
Drizzle with balsamic glaze.
Place the remaining slices of bread, butter-side up, on top of the sandwiches.
Cook for 2-3 minutes per side, or until the bread is golden brown and the cheese is melted.
Remove from the skillet, cut in half, and serve warm.
Notes
If you don't have fresh basil, you can use pesto instead.
You can also add a sprinkle of red pepper flakes for a bit of heat.
If you're using a panini press, cook the sandwiches for 3-4 minutes, or until the cheese is melted and the bread is crispy.
