watermelon chunks

fresh mint leaves

lime juice

white rum

club soda
Ice cubes

Instructions
Cut the watermelon into chunks and remove any seeds.
Place the watermelon chunks in a blender and blend until smooth.
Strain the watermelon juice into a pitcher to remove pulp.
In a glass, muddle the mint leaves with lime juice and sugar.
Add the muddled mint mixture to the pitcher of watermelon juice.
Stir in the white rum.
Add ice cubes to glasses and pour the watermelon mojito mixture over the ice.
Top with club soda and garnish with extra mint leaves.
Notes
Use fresh watermelon for the best flavor.
Adjust the sugar to your taste. You can use more or less.
For a non-alcoholic version, skip the rum and add more club soda.
