Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic to the pot and cook for an additional 1-2 minutes, or until fragrant.
Add the canned tomatoes (with their juices) to the pot, breaking them up with a spoon or spatula.
Pour in the vegetable broth and stir to combine. Bring the mixture to a simmer.
Reduce the heat to low and let the soup simmer for 15-20 minutes, stirring occasionally, to allow the flavors to meld.

Notes
