unsweetened plant-based milk
such as almond, soy, or coconut

vegan yogurt starter or 1-2 probiotic capsules
Instructions
In a small saucepan, heat the plant-based milk over medium-low heat until it reaches about 110°F (43°C).
Once the milk reaches the desired temperature, remove it from the heat and transfer it to a clean glass jar or container.
Add the vegan yogurt starter or probiotic capsules to the warm milk and stir gently to combine.
Cover the jar or container with a clean kitchen towel or cheesecloth and secure it with a rubber band.
Place the yogurt in a warm, draft-free spot, such as an oven with the light on or a countertop near a sunny window.
Allow the yogurt to ferment for 6-12 hours, or until it reaches your desired level of tanginess and thickness.
Notes
For a creamier texture, you can stir in a tablespoon of tapioca starch or arrowroot powder before heating the milk.
Customize your yogurt with flavorings and sweeteners such as vanilla extract, maple syrup, or fruit puree.
Store any leftover yogurt in an airtight container in the refrigerator for up to one week.
