onion, chopped
1
jalapeño
pepper, seeded and chopped (optional)
2
cloves
garlic 1/4 cup chopped cilantro
1
ripe
avocado, pitted and peeled
1
tablespoon
lime juice Salt to taste
Instructions
Bring a small pot of water to a boil. Add the tomatillos and cook for 5 minutes or until they soften.
Drain the tomatillos and place them in a blender or food processor with the onion, jalapeño (if using), garlic, and cilantro.
Blend until smooth.
Add the avocado and lime juice to the blender and pulse until combined, but still slightly chunky.
Season with salt to taste.
Transfer the dip to a bowl and serve with your favorite chips or veggies.
Notes
If you like a spicier dip, leave the seeds in the jalapeño.
For a smoother dip, blend the avocado with the other ingredients until completely smooth.
To store, place plastic wrap directly on the surface of the dip to prevent browning and refrigerate for up to 3 days.
