Make a small slit in each date and remove the pit.
Fill each date with a small amount of goat cheese, about a teaspoon.
Wrap each stuffed date with a half slice of bacon, securing it with a toothpick.
Place the wrapped dates on a baking sheet lined with parchment paper.
Bake for 15-20 minutes, or until the bacon is crispy and browned.
Remove from the oven and let cool slightly before serving.
Notes
If your goat cheese is too crumbly, you can mix in a little bit of cream cheese to make it easier to work with.
You can also add a sprinkle of chopped nuts, such as walnuts or pecans, to the goat cheese for extra crunch and flavor.
If you don't have toothpicks, you can use kitchen twine to secure the bacon.
