Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
In a mixing bowl, whisk together eggs, milk, flour, baking powder, salt, and cinnamon until smooth.
Melt butter in the skillet or baking dish over medium heat.
Arrange apple slices in a single layer in the skillet. Sprinkle with brown sugar.
Pour the batter evenly over the apples.
Bake for 20-25 minutes, or until golden brown and puffed up.
While the pancake bakes, make the syrup. In a small saucepan, combine apple cider, maple syrup, lemon juice, and cinnamon. Bring to a boil, then reduce heat and simmer for 10 minutes, or until thickened.
Serve the pancake warm with the apple cider syrup drizzled on top.
Notes
You can use any type of apple you like, but Granny Smith or Honeycrisp work well.
Feel free to add other spices to the batter, such as nutmeg or ginger.
If you don't have apple cider, you can use apple juice instead.
