shredded mozzarella cheese

chopped fresh basil

grated Parmesan cheese

Instructions
Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
Place chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness of about 1/2 inch.
Remove the plastic wrap and season both sides of the chicken with salt and pepper.
In a small bowl, combine the mozzarella cheese, basil, and garlic.
Divide the cheese mixture evenly among the chicken breasts, placing it in the center of each breast.
Roll up each chicken breast, starting with the short end, and secure with toothpicks.
Place the chicken rolls in a baking dish and drizzle with olive oil.
Sprinkle with Parmesan cheese.
Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Remove from oven and let rest for a few minutes before serving.
Notes
You can add a pinch of red pepper flakes to the cheese mixture for a bit of heat.
Feel free to use other herbs, such as oregano or thyme, in place of the basil.
If you don't have toothpicks, you can use kitchen twine to secure the chicken rolls.
