boneless, skinless chicken breasts

olive oil
Salt

pepper to taste

mixed greens

cubed watermelon

crumbled feta cheese

chopped red onion

balsamic vinegar
Instructions
Preheat the grill or a grill pan over medium heat.
Brush the chicken breasts with olive oil and season with salt and pepper.
Grill the chicken for 5-7 minutes per side, or until cooked through. Let rest for 5 minutes, then slice into thin strips.
While the chicken is resting, make the balsamic glaze. In a small saucepan, bring the balsamic vinegar to a boil.
Reduce the heat to low and simmer for 5-7 minutes, or until the vinegar has reduced by half and thickened slightly.
In a large bowl, combine the mixed greens, watermelon, feta cheese, and red onion.
Add the sliced chicken and drizzle with the balsamic glaze. Toss gently to combine.
Notes
You can use any type of mixed greens you like, such as spinach, arugula, or romaine lettuce.
If you don't have feta cheese, you can use goat cheese or mozzarella.
To make the salad ahead of time, prepare all the ingredients and store them separately. Assemble the salad just before serving.
