bananas, mashed

vanilla extract

chopped walnuts or chocolate chips (optional)
Instructions
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Line muffin tin with paper liners or grease with cooking spray.
In a large bowl, whisk together the flour, sugar, baking soda, and salt.
In a medium bowl, mash the bananas with a fork until smooth. Stir in oil, egg, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix until just combined. Don’t overmix, a few lumps are okay.
Fold in walnuts or chocolate chips, if using.
Divide the batter evenly among the muffin cups, filling each about 2/3 full.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
Use overripe bananas for the best flavor and sweetness. The darker the banana peels, the sweeter the muffins will be.
Don’t overmix the batter, as it can make the muffins tough.
Feel free to add other mix-ins, such as raisins, cranberries, or shredded coconut.
