2(20-ounce)cans young green jackfruit in water or brine, drained and rinsed
1tablespoonolive oil
1onion,diced
2clovesgarlic, minced
1cupketchup
¼cupapple cider vinegar
2tablespoonsbrown sugar
1tablespoonWorcestershire sauce
1tablespoonDijon mustard
1teaspoonsmoked paprika
½teaspoonchili powder
¼teaspooncayenne pepper (optional)
Saltandpepper to taste

Instructions
Shred the jackfruit using two forks.
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and cook for 1 minute until fragrant.
Add the shredded jackfruit and cook for 5 minutes, stirring occasionally.
In a small bowl, whisk together ketchup, vinegar, brown sugar, Worcestershire sauce, mustard, paprika, chili powder, cayenne pepper (if using), salt, and pepper.
Pour the BBQ sauce over the jackfruit and stir to coat. Reduce heat to low and simmer for 15-20 minutes, or until the sauce thickens and the jackfruit is tender.
While the jackfruit is simmering, toast the hamburger buns.
To assemble the sandwiches, divide the BBQ jackfruit among the buns and top with your favorite toppings.
Notes
Be sure to use young green jackfruit in water or brine, not the sweet kind in syrup.
You can adjust the amount of spices in the BBQ sauce to your preference.
