Ingredients

tablespoon
milk or water
Salt
and
pepper to taste

of your favorite cheese (cheddar, swiss, pepper jack, etc.)

slice
cooked bacon or sausage (optional)

whole-wheat or white bread, toasted
Instructions
Beat the egg and milk together in a bowl and season with salt and pepper.
Heat a skillet over medium heat and add a little oil or butter.
Pour the egg mixture into the skillet and cook, stirring occasionally, until scrambled and cooked through.
While the eggs are cooking, toast the bread.
Place the cheese on one slice of toast and top with the cooked eggs and bacon or sausage.
Place the other slice of toast on top and gently press down.
Cut the sandwich in half and enjoy warm!
Notes
You can add other fillings to your sandwich, such as avocado, tomato, spinach, or aioli.
If you don't like bacon or sausage, you can leave it out or substitute it with other protein sources like ham or smoked salmon.
If you're making this for a crowd, you can cook all the eggs at once and assemble the sandwiches later.
