Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius).
Toss butternut squash cubes with olive oil, salt, and pepper in a large bowl.
Spread butternut squash on a baking sheet and roast for 25 minutes, or until tender and lightly browned.
While the squash is roasting, prepare the avocado crema. In a small bowl or food processor, combine all the avocado crema ingredients and blend until smooth.
Warm the tortillas in a dry skillet or microwave.
