Ingredients
½
cup
rolled oats
1
cup
milk (dairy or plant-based)
1
ripe
banana, sliced
1
tablespoon
butter or coconut oil
1
tablespoon
maple syrup or honey
Pinch
of
salt
Optional
toppings:
chopped nuts, seeds, berries, granola, cinnamon, nut butter
Instructions
In a small pot, combine oats, milk, and salt.
Cook over medium heat, stirring occasionally, until the oats are soft and the mixture has thickened (about 5-7 minutes).
While the oats are cooking, heat butter or coconut oil in a frying pan over medium heat.
Add sliced bananas and cook until golden brown and caramelized on both sides (about 2-3 minutes per side).
Drizzle maple syrup or honey over the bananas and cook for another minute.
Pour the cooked oatmeal into a bowl and top with the caramelized bananas.
Add your favorite toppings and enjoy!
Notes
For extra flavor, add a pinch of cinnamon to the oatmeal while it's cooking.
If you prefer your oatmeal sweeter, add more maple syrup or honey to taste.
For a richer flavor, use brown sugar instead of maple syrup or honey to caramelize the bananas.
If you don't have any fresh bananas, you can use frozen bananas that have been thawed.
