Instructions
In a large bowl, whisk together the flour, baking powder, sugar, and salt.
In a separate bowl, whisk together the milk, egg, and melted butter.
Slowly pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix! Leaving a few small lumps is perfectly fine.
Heat a skillet or griddle over medium heat and lightly grease with butter or cooking spray.
Pour about 1/4 cup of batter onto the hot skillet for each pancake.
Cook for 2-3 minutes per side, or until the pancakes are golden brown and bubbles start to form and pop in the center.
Serve immediately with your favorite toppings like butter, maple syrup, fruit, or whipped cream. Enjoy!
Notes
For even fluffier pancakes, let the batter rest for 5-10 minutes before cooking.
Don't crowd the pan. Cook a few pancakes at a time to give them room to spread.
Want a little extra flavor? Add a teaspoon of vanilla extract to the batter.
