Optional: cooked meat

Instructions
Preheat the oven to 375 degrees F (190 degrees C).
Heat olive oil in an oven-safe skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add your chosen vegetables (and optional cooked meat) and cook for another 2-3 minutes until slightly softened.
In a medium bowl, whisk together eggs, milk, salt, and pepper.
Pour the egg mixture over the cooked vegetables in the skillet. Sprinkle with cheese.
Bake in the preheated oven for 20-25 minutes, or until the eggs are set and the center is no longer jiggly.
Let the frittata cool slightly before slicing and serving.

Get creative with fillings:
The possibilities are endless! Try roasted sweet potatoes, broccoli, zucchini, sundried tomatoes, or different cheeses.
Make it ahead:
Prepare the frittata up to the baking step, then cover and refrigerate overnight. Bake in the morning for a hassle-free breakfast.
