2-inch thick half-moon slice of watermelon
1
8 ounce tub of whipped cream,thawed
2 ½
cups
whole mini chocolate chip cookies
or broken chocolate chip cookies
Several fresh blueberries
Instructions
Cut the pointy ends off the half-moon watermelon slice to create a shape like a slice of cake.
Place the watermelon slice on a serving platter with the rind side at the bottom.
Cover the red part of the watermelon slice with the whipped cream, creating a smooth icing-like layer.
Arrange the chocolate chip cookies along the green rind of the watermelon to look like seeds.
Place several blueberries along the top edge of the whipped cream to act as the watermelon's "rind".
Chill for at least one hour before slicing and serving.
Notes
Use seedless watermelon.
For an even easier treat, use store-bought chocolate chip cookie crumbles instead of whole mini cookies.
To transport the watermelon cake, freeze it before wrapping it carefully in plastic wrap.
